Instant Pot Chicken Pull Sandwiches

Alright you guys. Let's talk a little bit about Chicken Pull Sandwiches! In our house we try to
stay far away from that junk that you find in pork (if you don't know step over to our friend Mr. Google and let your mind be blown!!) aside from our slight addition to bacon- who

doesn't love a good piece of bacon?! But I was craving some good BBQ last night and decided to come up with a way to have "pulled pork sandwiches" without the pork! To our surprise my random recipe turned out really well so I want to share it with you all!
What's even better about this recipe is it is so easy because you can use your Instant Pot! Let me just say- if you are a mom and do not have one of these bad boys yet; YOU NEED ONE! A huge lifesaver for those "Oh crap! its five and the hubby will be home for dinner soon" moments when the meat isn't thawed, you haven't showered but the baby is still alive so it's a winning mom day!
Here's the recipe:
3 meaty FROZEN boneless/skinless chicken breast
1 cup of your fav BBQ sauce ( I used Simple Truth's Sweet & Spicy- YUM )
2 tbsps (about I just guess) of organic soy sauce
2 tbsps (this I measured) of apple cider vinegar
1 tbsp (about) of olive oil
Sprinkle of oregano and onion powder
Add your FROZEN chicken to the pot of your Instant Pot and sprinkle on some good quality oregano and onion powder. In a mixing bowl place your BBQ sauce, soy sauce and apple cider vinegar then give it a good mix! Pour over the mixture to cover all pieces of the chicken. Pour you olive oil and sprinkle a little bit more of the oregano and onion powder to the top.
Seal and set your Instant Pot to manual cook, normal pressure for 40 minutes. Once pressure is released and it is safe to remove the lid, do so and place your three now cooked chicken breasts into an oven safe pan with a rim (I like glass). Scoop some of the juice that is left in your Instant Pot to cover the chicken and place in your oven on the broil setting until the top looks caramelized!
Remove from over and begin to shred the chicken (I just use two forks for this). Once done pour the rest of your liquid from the Instant Pot over your chicken and serve.
SO easy, SO yummy and it makes LEFTOVERS which is my personal favorite. Serve it with your favorite side dish and some yummy gluten free rolls and you will have some happy full tummies in your house tonight!
