Dinner on a Budget

Have you ever been between paychecks and wondering how you can possibly have an actual meal with what you have remaining in your kitchen? I know I cannot be the only one so here is something that I cooked up this week while in that same situation.


If you are local in Colorado you will absolutely want to check out Ahavah Farms in Peyton, Colorado. They are a 'pay what you can afford' farm who strives to make the purest CLEAN produce you can find! They do not even use tractors people, how cool is this! While you will WANT to pay full price for your goodies to help keep them around how awesome is it that they can provide this for people who may find themselves in the in-between struggling to put good food on their families tables?! Ramen Noodle Stir Fry


Ingredients:

- 2 packs ramen noodles (toss the gross seasoning packs)

- 2 cups organic chicken broth

- 1/2 cup organic soy sauce

- Any and as much/little organic seasoning as you want! I like parsley, basil, garlic, etc.

- 2 free range duck eggs

- a healthy pile of organic, pure, clean veggies (I used kale & arugula)



Directions:

- Place all liquids, seasoning and broken up ramen noodles into a large sauce pan and bring to a boil

- Lower heat to medium and add veggies to the pan

- Simmer until all liquid is gone

- Cook in two eggs to desired consistancey

- Enjoy!


So easy, fast & affordable for working with what you may already have at home!
